Ragi is one of Maharashtra's most underrated grains — calcium-rich, gluten-free and with a deep, malty flavour that pairs beautifully with cocoa. These brownies are a staple at our Pune bakery and consistently outsell the regular kind.
🍳 Ragi Chocolate Brownies
Ingredients
- 1 cup ragi (finger millet) flour
- 1/2 cup cocoa powder
- 3/4 cup jaggery powder
- 1/2 cup cold-pressed coconut oil
- 2 eggs (or flax eggs)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Method
- Preheat the oven to 180°C and line a square tin with parchment.
- Whisk coconut oil, jaggery, eggs and vanilla until smooth.
- Fold in ragi flour, cocoa and baking powder — do not overmix.
- Bake 22–25 minutes until a toothpick comes out with moist crumbs.
- Cool completely before slicing into 9 squares.
