Ragi Chocolate Brownies (No Refined Sugar) cover

Ragi is one of Maharashtra's most underrated grains — calcium-rich, gluten-free and with a deep, malty flavour that pairs beautifully with cocoa. These brownies are a staple at our Pune bakery and consistently outsell the regular kind.

🍳 Ragi Chocolate Brownies

Prep: 45 minutes · Serves: 9 squares

Ingredients

  • 1 cup ragi (finger millet) flour
  • 1/2 cup cocoa powder
  • 3/4 cup jaggery powder
  • 1/2 cup cold-pressed coconut oil
  • 2 eggs (or flax eggs)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

Method

  1. Preheat the oven to 180°C and line a square tin with parchment.
  2. Whisk coconut oil, jaggery, eggs and vanilla until smooth.
  3. Fold in ragi flour, cocoa and baking powder — do not overmix.
  4. Bake 22–25 minutes until a toothpick comes out with moist crumbs.
  5. Cool completely before slicing into 9 squares.
